10 eggs
1/2 cup milk
100g feta cheese, crumble with extra to sprinkle on top at the end
1 head broccoli, cut into bite sized pieces
1 cup frozen peas
1 leek, sliced or 3 spring onions, finely chopped
3 – 4 baby marrows, sliced in rounds
1/4 cup fresh basil leaves
Method
- Preheat oven to 180c fan force.
- In a large mixing bowl, cracks the eggs, add milk and feta and whisk together until well combined.
- Then add the vegetables and a generous amount of black pepper and some salt.
- Pour into a medium/large baking dish and bake in oven for 25 – 30 minutes or until cooked through and golden brown.
- Serve with fresh basil leaves and extra feta crumbled on top.
