Vegetable Frittata

Ingredients

  • 10 eggs

  • 1/2 cup milk

  • 100g feta cheese, crumble with extra to sprinkle on top at the end

  • 1 head broccoli, cut into bite sized pieces

  • 1 cup frozen peas

  • 1 leek, sliced or 3 spring onions, finely chopped

  • 3 – 4 baby marrows, sliced in rounds

  • 1/4 cup fresh basil leaves

Method

  • Preheat oven to 180c fan force.
  • In a large mixing bowl, cracks the eggs, add milk and feta and whisk together until well combined.
  • Then add the vegetables and a generous amount of black pepper and some salt.
  • Pour into a medium/large baking dish and bake in oven for 25 – 30 minutes or until cooked through and golden brown.
  • Serve with fresh basil leaves and extra feta crumbled on top.
