Ingredients

  • 1 tablespoon mayonnaise

  • 1 tablespoon coarse-grain Dijon mustard

  • 1 whole wheat pita bread

  • 1/4 avocado, pitted, peeled & cut lengthways into thin slices

  • 80g skinless chicken breast, thinly sliced

  • 20g broccoli microgreens & shredded lettuce

Method

  • Mix mayonnaise and mustard in a small bowl.
  • Cut the pita in half and spread the mayonnaise mixture evenly on the inside.
  • Layer in the avocado slices, chicken, lettuce and microgreens into the pita.
  • Enjoy with a crisp mixed green salad and dress with a dash of balsamic.
