1 tablespoon mayonnaise
1 tablespoon coarse-grain Dijon mustard
1 whole wheat pita bread
1/4 avocado, pitted, peeled & cut lengthways into thin slices
80g skinless chicken breast, thinly sliced
20g broccoli microgreens & shredded lettuce
Method
- Mix mayonnaise and mustard in a small bowl.
- Cut the pita in half and spread the mayonnaise mixture evenly on the inside.
- Layer in the avocado slices, chicken, lettuce and microgreens into the pita.
- Enjoy with a crisp mixed green salad and dress with a dash of balsamic.
