1 PAN SWEET CHILLI CHICKEN WITH CASHEW NUTS

400g chicken stir-fry pieces
250g mushrooms, sliced
150g sugar snap peas, ends trimmed
1 head broccoli
1/3 cup raw cashew nuts
1/3 cup sweet chilli sauce
1/3 cup Worcestershire sauce
1/2 lemon, juiced
2 tbsp water
Method
- Preheat the oven to 200c.
- Chop the broccoli into small florets, slice the mushrooms and trim the ends of the snap peas. Combine the chicken, mushrooms, snap peas, broccoli and cashew nuts on a large lined baking tray.
- In small bowl, mix the sweet chilli sauce, worcestershire sauce, water and lemon juice. Pour over the veg and chicken and mix well.
- Cook in the oven for 15 minutes.
- Serve with brown rice or cous-cous.
