1 PAN SWEET CHILLI CHICKEN WITH CASHEW NUTS

Ingredients

  • 400g chicken stir-fry pieces

  • 250g mushrooms, sliced

  • 150g sugar snap peas, ends trimmed

  • 1 head broccoli

  • 1/3 cup raw cashew nuts

  • 1/3 cup sweet chilli sauce

  • 1/3 cup Worcestershire sauce

  • 1/2 lemon, juiced

  • 2 tbsp water

Method

  • Preheat the oven to 200c.
  • Chop the broccoli into small florets, slice the mushrooms and trim the ends of the snap peas. Combine the chicken, mushrooms, snap peas, broccoli and cashew nuts on a large lined baking tray.
  • In small bowl, mix the sweet chilli sauce, worcestershire sauce, water and lemon juice. Pour over the veg and chicken and mix well.
  • Cook in the oven for 15 minutes. 
  • Serve with brown rice or cous-cous.
